  • Helsta viðfangsefni þessa lokaverkefnis er að leitast við að staðsetja hinn þjóðlega grunn matarsögu Íslendinga í veruleikanum sem stækkuð heimsmynd nútímans hefur skapað og finna þar samhengi. Einnig er þess freistað að sýna fram á að þróun hefur átt sér stað undanfarin ár hvað snertir afturhvarf hérlendrar matarmenningar til fortíðar og einfaldleika og skýra tengsl þeirrar þróunar við alheimsvæðinguna. Ennfremur eru dregin fram áhrif grænna alheimshreyfinga á daglega matarhegðun þjóðarinnar og ljósi varpað á tengsl þeirra við þróun matarmenningar og markaðssetningar matvæla. Markmiðið með verkefninu er að sýna fram á að matarhefð og matvælaframleiðsla Íslendinga stendur enn traustum fótum í fortíðinni þrátt fyrir nútímavæðingu á öllum sviðum og að í raun hefur þróun undanfarinna ára leitt til aukinnar sóknar í þann auð sem hinar fornu þjóðlegu aðferðir við verkun og geymslu matvæla eru.
    Til þess að rannsaka tengsl nútímans við hefðir fortíðarinnar var auk skjalarannsókna og viðtala stuðst við þann grunn sem nútímafræðinámið gefur. Eðli og tildrög nútímans eru helsta viðfangsefni námsleiðarinnar og markmið hennar er að þjálfa með nemendum gagnrýna hugsun. Námið skapar því hæfni og ákjósanlegan bakgrunn til að átta sig á samhengi, straumum og stefnum og nýtist þannig vel í verkefninu.

    The main subject of this thesis is to put the history of traditional Icelandic food in context with the expanded world view modernity has created. Also to demonstrate the development that has been going on for the last few years where the domestic food culture has been heading towards simplicity, plainness and the past, as well as pointing out how these developments are related to globalisation. Furthermore to show the impact of international grassroots organizations on the food behaviour of the Icelandic nation and to expose their influence on the development in food culture and food marketing. The goal of this project is to demonstrate how ancient Icelandic food traditions are still standing firm despite modernization in all areas and in fact, the trend in recent years has led to increased use of the traditional methods for producing and storing food.
    Document research and interviews were done to investigate the relationship between modernity and traditions of the past but this thesis is mainly based on the methods of modern studies. The main theme in the School of Modern Studies is the nature and circumstances of the modern world. The aim is to enhance critical thinking and thus develop the student‘s ability to put policies and trends in context and therefore it makes a good tool to work with in this project.
