  • Markmið með verkefninu er að kanna hvort grundvöllur sé fyrir bændur og aðra að fara út í heimavinnslu á hörðum ostum úr sinni eigin mjólk. Þetta gæti orðið spennandi kostur til að auka virðisauka hrámjólkur. Farið var út í að greina stofnkostnað, rekstrarkostnað og markaðsmál heimavinnslu. Niðurstaðan var að stofnkostnaður er hár, viðsnúningur í rekstri verður eftir tvö og hálft ár m.v. gefnar forsendur. Markaðsgreining leiddi í ljós að heimavinnsla á ostum er mjög lítil en almennur áhugi er til staðar á því. Greining á þýskum ostamarkaði leiddi í ljós að hann er svipaður og hérlendis þ.e. sala á ostum eykst. Sala á hörðum ostum í Þýskalandi er um 47,4% af heildarostasölu árið 2013 á móti 27,6% af mjúk ostum. Heimavinnslan er þó meiri og þeir flytja einnig mikið inn af ostum.

    Abstract.
    The main aim with this essay is to see if there is a ground for farmers and others in related fields of production, to start local cheese making from their own milk. This could be an exciting option for increasing the value of raw milk. Analysis where done on start cost (investment cost), operating cost and marketing issues for local cheese production. The result was the start cost was high and the turning point for operating cost will be in two an a half years given certain criteria. Marketing analysis showed us the home production of cheese in Iceland is in very little scale, but the interest of icelandic consumers in this product has already wakened, because cheese in this field of production is imported in the icelandic market. Analysis of the german cheese market revealed similarity of the icelandic cheese market in the way the sale of cheese is growing. The sale of hard cheese in the germany market is about 47.4% of total sale of cheese, while the sale of soft cheese is 27.6%. Local cheese production per capita in Germany is much more than in iceland, but still a lot of cheese is imported into the german cheese market.
