This project focuses on the fishing, processing, and the market for redfish (Sebastes). It also covers the topic of the redfish species which is caught in North Atlantic Ocean as well as species caught in Pacific Ocean. The processing and export of the species is also examined. In addition it is examined where Iceland stands regarding fishing and export of redfish products and to which countries these products are exported. The status of the redfish stock is also discussed in the project, in relation to stocks caught in the North Atlantic Ocean and in the Pacific Ocean. Many of these species are in bad condition due to overfishing in recent years. Because of the overfishing one of the species is considered to be in endangered. Many security measures and fishing policies have been done due to this problem. These measures are designed in the hope that positive development can be achieved in the redfish stock. The Icelandic catch has been decreasing in recent years because of the negative development in few of the redfish species near Iceland and quota restriction put on by the Icelandic government. The quota restriction has also led to a decrease in exportation. The main countries that Iceland has been exporting redfish to in the recent years are Germany, Russia and Japan. It may be assumed that Icelandic export figures can predict how large the market is for redfish and products related to it, since Iceland is the main fishing country of redfish.
